Smashed Cucumber and Shredded Chicken

Let us introduce you to 'Smashed Cucumber and Shredded Chicken'. Crunchy cucumber with chicken soaked in a tangy and slightly garlicky dressing. No cooking needed and the method includes a little outlet for destressing. This answers the age-old question - what to do with all that leftover chicken? No, no more chicken sambos and no, you really don't feel like putting too much effort for dinner tonight.


Serves 2


  • 1/2 tsp salt
  • 2 tsp white sugar
  • 3 tsp light soy sauce
  • 3 tsp sesame oil
  • 2 tsp Chinkiang vinegar
  • 2 garlic cloves, minced
  • 1 tsp chilli oil (we used Lao Gan Ma)
  • 200g leftover cooked chicken, shredded (use two forks to shred)
  • 1 cucumber, sliced lengthways. Use a teaspoon to scoop the seeds out
  • 1 tbsp white sesame seeds
  • a handful of coriander, chopped (not pictured)

What to do:

  1. In a small bowl, mix the salt, sugar, soy sauce, sesame oil, vinegar, garlic and chilli oil. Set aside
  2. Place the cucumber halves on a table with the skin facing up. Lay a tea towel on top of the halves.
  3. Use a wine bottle or rolling pin to carefully bash the cucumbers so that they split in half. You should end up with 4 long pieces
  4. Slice the cucumbers into bite-sized chunks
  5. In a large bowl, add the chicken, cucumber and dressing. Mix well
  6. Sprinkle sesame seeds and chopped coriander on top then serve
